A surprisingly easy to make dessert that sounds fancy, impresses guests and tastes amazing. What’s not to love. I especially love it because it reminds me of Claudia my Italian “big sister” who taught me how to make this dessert 20 years ago. As per every dish that I loved in my gluten eating days, I thought this was a dish of my past until I noticed Schar gluten-free lady fingers at Roche Brothers in Natick. These $5 gf goodies are totally worth the price.

Claudia’s Absolutely Fabulous Tiramisu Recipe Ingredients:

3 Large Eggs

1/4 cup sugar

2 cups of espresso (please not instant go to a coffee shop if you can’t make it at home!)

3 Tbsp of Kahlua

8 oz Mascarpone cheese

1 package of Schar Gluten-Free Lady Fingers

1) Combine 3 egg yolks, 1 tbsp espresso, sugar and kahlua in a large mixing bowl. Beat 2-3 minutes. Add the mascarpone cheese and beat 3-5 minutes until consistency is smooth.

2) In a separate bowl, combine the 3 egg whites and a pinch of sugar. Beat until the mixture forms stiff peaks. Gently fold the egg whites into the mascarpone mixture (don’t just stir it in).

3) Pour the remaining espresso into a flat dish. This is the tricky part. dip each side of the lady finger in the espresso for a second. You want the lady finger to be moist but not so full of liquid that it falls apart. It took me 3 lady fingers to get the hang of this. Place each lady finger after dipping into the bottom of a loaf pan.

4) once the bottom of the loaf pan is layered, spread 1/2 of the mascarpone mixture over it. Sprinkle with cocoa powder.

5) repeat the espresso dipping process with the lady fingers and layer them over the mascarpone cheese. spread the other half of the mascarpone cheese mixture and top with cocoa powder.

6) Refrigerate for at least 1 hour before serving. 24 hours to set is ideal.
