Appetizers for the Holidays

These next few weeks, many of us are busy with gatherings of friends, family and office holiday parties. If you are gluten-free, bringing an appetizer to parties, is a great way to contribute and ensure that there is something there that you can eat. Unfortunately, “gluten-free” scares many guests away. Many of us have experienced party after party, where no one wants to try the “gluten-free”app. For this reason, I try to avoid overly obvious gluten-free app’s, unless I know that guests are open to gluten-free fare. Instead of app’s like bruschetta on gluten free baguettes, I look for dips and cheese where gluten isn’t a main ingredient and where I don’t have to worry about heating food up in an oven with gluten-full ingredients.

This past Thanksgiving, Mama G brought the most amazing, mouth watering app’s. I was so excited when she announced that she had brought Artichoke dip. Most restaurants use flour in their recipe so it’s been years since I’ve had this app. Mama G’s apps are easy and delicious, but low-fat, they are not!

Artichoke and Spinach Dip a la Mama G
1 can artichoke hearts, drained and chopped
3 garlic cloves, minced (optional) or (1/2 t garlic powder)
1 pkg frozen chopped spinach, defrosted and squeezed
Add:
2 – 8 oz pkgs cream cheese
1/2 c mozzarella, shredded
1 c shredded parmesan cheese
½ c mayo
2 t lemon juice
Bake 325 degrees, 20 mins covered and then 5 more mins uncovered.

Serve with your favorite gluten-free crackers or tortilla chips for a fun twist.

Onion and Red Pepper Brie a la Mama G
1 chopped onion, browned
1 chopped red pepper, lightly browned
Tossed the above with 2 t Honey Mustard.
Spoon on top of an 8 oz wheel of brie.
Microwave for 45 seconds.

Serve with your favorite gluten-free crackers.
