Gluten Free Tamale Pie

I must confess, I have a new addiction, gluten-free tamale pie. After making this fabulous dish last week, I can’t stop craving it. I dream about eating more. This tamale pie recipe is really delicious and super easy. The sweetness of the cornbread combined with the spicy bean/meat filling makes it the ultimate comfort food. Since you add your favorite salsa and season it to taste, you can make it as mild or spicy as you like.  As an added bonus it freezes really well which comes in handy for working families and stressed out students. 3 cups crumbled gluten-free corn bread (If you don’t have a recipe that you like try out Bob’s GF Cornbread)

3 cups shredded cheddar cheese

1 tbl olive oil

1 medium yellow onion finely chopped

3 chipotle chiles in adobo minced

1 lb ground beef

1 – 16 oz can kidney beans

1 – 14 oz can diced tomatoes, drained (fire roasted if possible)

1 jar of salsa





Heat oven to 450. Crumble cornbread, half the cheese, salt and pepper.

Heat oil in a skillet. Cook the onions and chiles until the onion has browned. Add the beef and cook until browned. Add the beans, tomatoes, salsa. Cook for 5 minutes.  Add the remaining cheese. Taste and season to your liking with salt, pepper and redhot.

Crumble the cornbread/cheese over the meat. Bake for 10 min. until the cornbread is browned.

Cut the pie into 6 slices. Serve and enjoy.
